ABSTRACT
Celem przeprowadzonych badań była ocena wpływu parametrów sublimacyjnego, konwekcyjnego i konwekcyjno-mikrofalowego suszenia owoców rokitnika na kinetykę procesu i wybrane cechy jakościowe suszu. Proces suszenia sublimacyjnego przeprowadzano przy temperaturze półek grzejnych 25°C, 45°C i 65°C, a suszenie konwekcyjne oraz wspomagane mikrofalami o mocy 100 W, realizowano przy przepływie powietrza 0,5 m·s –1 , w tym samych zakresie temperatur powietrza suszącego. Przeprowadzono analizę kinetyki suszenia owoców rokitnika, wskazującą na możliwość ograniczenia czasu procesu względem nielicznych dostępnych danych literaturowych oraz zaproponowano metodę suszenia sublimacyjnego jako najlepszą ze względu na zachowanie barwy i retencję kwasu L-askorbinowego w suszu.
